Seasoned Chicken and Rice Casserole

This seasoned chicken and rice casserole is a cozy, one-dish meal with juicy chicken, savory rice, and plenty of flavor.

Ingredients 

  • 8-10 small to medium sized chicken drumsticks
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 tsp salt, divided
  • 1 tsp black pepper, divided
  • 1 tbsp paprika, divided
  • 1 tbsp onion powder, divided
  • 1 tbsp garlic powder, divided
  • 1 tbsp Italian seasoning, divided

Instructions 

  • Preheat oven to 350 degrees F. Spray a 9×13 baking dish with non stick spray.
  • Add the rice, broth, and half of all of the seasonings into the baking dish. Stir well. Now place the chicken drumsticks on top side by side and season the top of the chicken with the remaining seasonings. Cover tightly with aluminum foil and bake for 60 minutes. Remove the foil and bake for an additional 5 minutes. Enjoy!

    This recipe was awesome. It was so easy, and I loved that it only used one-pan! The rice was soft and flavorful. I did make sure to remove the skins off the drumsticks before cooking.

    This was great. Made it with 4 chicken thighs and added some cayenne..the chicken was incredibly tender, this made SO MUCH rice (that’s a good thing)!

    Hey Julia! I think the measurements are off on this one. I made this dish last night and we weren’t able to eat it cause of the seasoning. I think you might have meant to put tsp instead of tbsp?
