Skillet Chicken and Black Beans

Ingredients

  • 1 tbs olive oil

  • 2 lbs chicken breast, cubed

  • 2 tbs taco seasoning

  • 15 oz can black beans, drained and rinsed

  • Optional Toppings: cooked cilantro rice, cheese, tortillas, lettuce, tomatoes, sour cream and more

Directions

  • To a large skillet over medium heat on the stove add the oil once hot add in the chicken and seasonings stir the chicken around to get coated in the seasonings and cook for about 4 minutes on each side or until the chicken cooks through. Stir in the can of beans and let the beans heat through. Serve over rice as a burrito bowl, or in a tortillas as a burrito or anyway!
