Slow Cooker Chicken with Potatoes and Carrots

Slow cooker chicken with potatoes and carrots is a classic, comforting meal that practically cooks itself—tender, flavorful, and family-friendly.

Ingredients 

  • 2 lbs chicken breasts,, cut into strip or larger pieces
  • 3 lbs golden potatoes, , cut into wedges
  • 1 lb baby carrots
  • ½ tbsp salt
  • ½ tbsp pepper
  • 1 tbsp paprika
  • 1 tbsp Italian seasoning
  • ½ tbsp garlic powder
  • ½ tbsp onion powder
  • Optional: 1/2 cup water or broth for extra juicy

Instructions 

  • Add the chicken into a slow cooker and season with half of the seasonings. Stir to coat the chicken in the seasoning. Add in the potatoes, carrots, and remaining seasonings stir.
  • Optional: Add in 1/2 cup water or broth.
  • Cook on LOW for 5-6 hours or HIGH for 4-5 hours or until the chicken is cooked through. Enjoy!

    I want to make sure I do this correctly, so I wanted to ask – do you put the chicken in raw, or do you cook it first before putting in the crockpot?
