Slow Cooker Chipotle Chicken

Ingredients

  • 2 chipotle peppers in adobo sauce (they come in a can but just use two of the peppers in the can – you can refrigerate in a bag or freeze the remaining peppers for future recipes)

  • 1 yellow onion, diced

  • 8 oz can tomato sauce

  • 1 tbs minced garlic

  • 1 tsp Oregano

  • 2 tsp chili powder

  • 1 tsp cumin

  • 2 tsp salt

  • 1/2 tsp pepper

  • 1 1/2 lbs chicken breast

  • Serving suggestions: cooked white rice, tortillas to make the chicken into burritos, or make in to a burrito bowl

Directions

  • Cut the chipotle peppers on a cutting board into very small pieces.
  • Spray the inside of a slow cooker with non-stick spray add in the chipotle peppers, diced onion, tomato sauce, minced garlic, and seasonings stir well now add the chicken in and coat it in the sauce cover with the lid and cook on low for 6-7 OR high for 5 hours or until the chicken is cooked through.
