Southwest Chicken Skillet

Ingredients 

  • 2 tbs olive oil
  • 1 white onion, chopped
  • 1 red bell pepper, chopped
  • 1 tbs minced garlic
  • 1 14 oz can drained and rinsed black beans
  • 1 14 oz can of corn
  • 2 cups cooked shredded chicken
  • 2 tsp chili powder
  • 1 tsp cuman
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • Juice from 1 lime

Instructions 

  • Add olive oil to a large pan heat on medium heat once its hot add the peppers and onions in let them get soft it should take about 4-5 minutes.
  • Add black beans, corn, chicken, and seasonings let everything cook together for about five minutes.
  • Add the juice from one lime in and stir everything together.
  • I like to enjoy mine topped with sour cream, avocado, shredded cheese, and more.
