Tamale Casserole

Tamale casserole is cheesy, bold, and full of Tex-Mex flavor—everything you love about tamales without the wrapping.

Ingredients 

  • ½ lb ground turkey , OR ground beef
  • 15 oz can pinto beans, drained and rinsed
  • 15 oz can corn, drained
  • 10 oz can red enchilada sauce
  • 8.5 oz box jiffy corn muffin mix
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • cup water
  • 4 oz cheddar cheese, shredded

Instructions 

  • Preheat oven to 350 degrees F.
  • To a skillet on the stove add the ground turkey and break it up and cook through. To a large bowl add in the cooked ground turkey, pinto beans, corn, red enchilada sauce, jiffy, seasonings, and water stir well.
  • Spray a 9×13 baking dish with non stick spray add the casserole in and spread it out sprinkle the top with the shredded cheese and bake for 30-35 minutes. Top with your favorite taco toppings and enjoy!

    This was very easy and very VERY good. I used ground beef and a homemade enchilada sauce using a can of tomato sauce as the starting point (that took about the same time as browning the ground beef), since I didn’t want to make a special trip to the store. We’ll get at least 8 servings from this.

    Can this be frozen? If so, before or after cooking?

    Could I make this into a freezer meal? Would this freeze well? I would prefer to freeze it unbaked, and then bake it after it thaws. Let me know if you have done this.
