Tuscan Chicken and Pasta

Tuscan chicken and pasta is creamy, savory, and loaded with sun-dried tomatoes, garlic, and fresh spinach for bold Italian flavor.

Ingredients 

  • 1 tbs olive oil
  • 1 lb chicken breast, sliced in half horizontally thin
  • 2 tsp Italian seasoning, divided
  • 2 tsp salt, divided
  • 1 tsp pepper
  • 2 tbs butter
  • 2 tbs minced garlic
  • 2 ¼ cup chicken broth, divided
  • 2 tbs tomato paste
  • 1 ¼ cup half and half
  • cup sun dried tomatoes
  • ½ lb fettuccini pasta
  • cup parmesan cheese
  • 3 cups fresh spinach

Instructions 

  • Season the chicken on each side with 1 tsp of Italian seasoning and 1 tsp of salt.
  • To a large saute pan over medium heat add the oil once hot add in the chicken and cook for about 4-5 minutes on each side or until the chicken is completely cooked through. Remove the chicken to a separate plate and cut into bite sized pieces cover the plate with foil to keep the chicken warm.
  • To the same pan the chicken was cooked in add the butter over medium heat and let it melt down once melted add in the minced garlic, 1/2 cup of the chicken broth, tomato paste, 1 tsp Italian seasoning, and 1 tsp salt. Whisk well turn heat to low and let simmer for 2 minutes.
  • Add in the remaining chicken broth, half and half, and sun dried tomatoes bring mixture up to a simmer the add in the pasta and simmer stirring occasionally until the pasta is tender. (If the liquid line gets too low add in 1/2 of water in at a time until the pasta becomes tender)
  • Stir in the parmesan cheese and spinach let the spinach wilt down and enjoy!

    Hi! Half and half is not listed in the ingredient list, but is in the instructions. Chicken broth is listed twice in the ingredient list.

    Hi Julia. I made the tuscan chicken pasta the other night and noticed the half and half was left out of your ingredients list. I had to go back to your video to see how much to use. Tasty dish, but I did alter it a bit. The hubby doesn’t like sun dried tomatoes, and I was out of tomato paste. I added some tomato sauce to taste. I tasted the sauce near the end and found it a bit bland for me, so I added some basil, herbs de Provence, garlic powder, and onion powder. We both liked it. I think next time I’ll add some chopped onion.
