Vegetable and Rice Soup

Ingredients 

  • 3 large carrots, sliced
  • 3 ribs celery, sliced
  • ½ white onion, diced
  • 3 tbs olive oil
  • 8 cups chicken broth
  • ½ tsp pepper
  • 1 tsp salt
  • 1 tsp thyme
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¾ cup uncooked white rice
  • 1 tbs dried parsley

Instructions 

  • To a large pot over medium heat, add the oil and once the oil is hot add the vegetables and saute until soft. Now add in the broth and seasonings bring up to a boil. Add in the rice and parsley, stir well. Let simmer covered for 15 minutes stirring frequently until the rice is tender. Enjoy!

    This seems like a good way to use up some carrots and celery, even sizing the recipe down. Would it work in a slow cooker? I know folks have had success cooking rice dishes in a slow cooker. In any case, I’m finding your recipes VERY helpful and following your YouTube channel.
