Veggie Pasta

This veggie pasta is fresh, fast, and packed with colorful vegetables for a light yet satisfying meal.

Ingredients 

  • 16 oz rigatoni pasta , OR any pasta
  • 15 oz can Italian style petite diced tomatoes
  • 6 oz bag frozen mixed vegetables
  • 1 cup frozen spinach
  • 2 cloves garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 1 tsp oregano
  • ½ cup Italian style cheese

Instructions 

  • Bring a large pot of water to a boil add the pasta cook according to the package instructions. Strain and set to the side.
  • To a large pan on the stove add in the diced tomatoes, frozen mixed vegetables, spinach, garlic, and seasonings stir well. Let simmer for 10 minutes. Stir in the cooked pasta and cheese. Enjoy.

    Yummy!! They only had 10 oz bags of frozen veggies at my walmart so I did that with 8 oz of whole wheat pasta to make it a little more healthy. Great taste and flavor.
