
Wild Rice and Broccoli Side Dish
Ingredients
- 1 cup uncooked wild rice
- 1 Tbsp butter
- 1 ¾ cups vegetable broth
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp minced garlic
- ½ cup heavy cream
- 1 cup Colby jack cheese, shredded
- 12 oz frozen broccoli
Instructions
- To a large pot on the stove and over high heat, add the wild rice, butter, vegetable broth, and seasonings. Stir well. Bring to a simmer, then turn the heat to low and cover with the lid. Let simmer for 40 minutes.
- Once time is up, stir in the minced garlic, then add in the remaining ingredients. Stir well and cover with the lid. Let cook for 5-10 minutes or until the broccoli is tender.

I wanted to like it more. I found the recipe in the cookbook and it’s not accurate at all. We ended up having to cook the rice over an hour and adding about an extra 1/2 cup of broth. Frozen broccoli doesn’t cook in 5-10 minutes so we had to cook that in the microwave first. It’s a lot of time for a side dish. If I make it again, I would probably use the Rice a Roni long grain/wild rice blend.
I was not clear on whether the frozen broccoli needed to be cooked before adding. I will try cooking it first next time. I forgot to rinse my rice which may have affected the amount of time needed for simmering. I needed to cook it longer. Will definitely be making again again. Great flavor.
