Wild Rice and Broccoli Side Dish

This wild rice and broccoli side dish is savory, wholesome, and perfect alongside chicken, turkey, or any main course.

Ingredients 

  • 1 cup uncooked wild rice
  • 1 Tbsp butter
  • 1 ¾ cups vegetable broth
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp minced garlic
  • ½ cup heavy cream
  • 1 cup Colby jack cheese, shredded
  • 12 oz frozen broccoli

Instructions 

  • To a large pot on the stove and over high heat, add the wild rice, butter, vegetable broth, and seasonings. Stir well. Bring to a simmer, then turn the heat to low and cover with the lid. Let simmer for 40 minutes.
  • Once time is up, stir in the minced garlic, then add in the remaining ingredients. Stir well and cover with the lid. Let cook for 5-10 minutes or until the broccoli is tender.
