Ingredients 

  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 1 ½ tbsp garlic, minced
  • 1 ½ tsp salt
  • ½ tsp pepper
  • 1 tsp paprika
  • ½ tsp ground coriander
  • tsp cayenne pepper
  • 1 tsp curry powder
  • 14 ounce can coconut milk
  • 4 tbsp creamy peanut butter
  • 2 tbsp tomato paste
  • 2 15-ounce cans chickpeas, drained
  • 1 lime
  • ¼ cup cilantro
  • Naan bread for serving

Instructions 

  • To a large pot on the stove over medium height heat add in the oil once hot add in the onion cook for 3 minutes to soften
  • Stir in the garlic and seasonings.
  • Now stir in the remaining ingredients.
  • Let simmer for 5-7 minutes or until the sauce thickens slightly.
  • Serve over rice with Naan on the side
