10 Minute Peanut Butter Curry
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 ½ tbsp garlic, minced
- 1 ½ tsp salt
- ½ tsp pepper
- 1 tsp paprika
- ½ tsp ground coriander
- ⅛ tsp cayenne pepper
- 1 tsp curry powder
- 14 ounce can coconut milk
- 4 tbsp creamy peanut butter
- 2 tbsp tomato paste
- 2 15-ounce cans chickpeas, drained
- 1 lime
- ¼ cup cilantro
- Naan bread for serving
Instructions
- To a large pot on the stove over medium height heat add in the oil once hot add in the onion cook for 3 minutes to soften
- Stir in the garlic and seasonings.
- Now stir in the remaining ingredients.
- Let simmer for 5-7 minutes or until the sauce thickens slightly.
- Serve over rice with Naan on the side
