20 – Minute Cheeseburger QuesadillasCourse: DinnerCuisine: AmericanDifficulty: Easy
1 lb ground beef
3-4 tbs ketchup
2-3 tbs yellow mustard
8 medium sized tortillas
1 1/2 cups shredded cheddar cheese
1/2 cup sliced dill pickles
1/2 white onion diced
(any other hamburger toppings you love)
- Special Sauce
1/2 cup mayonnaise
2 tbs minced white onion
2 tbs minced dill pickle
4 tbs ketchup
2 tsp white vinegar
- To a small bowl add all of the sauce ingredients. Whisk well. Store in the fridge.
- To a skillet over medium high heat add the ground beef break it up and cook it through. Remove any grease in the pan. Stir in the ketchup and mustard.
- To a clean skillet on the stove add a little oil spray then place a tortilla down sprinkle the tortilla with cheese, the ground beef mixture, pickles, onion, more cheese and any other hamburger toppings you enjoy. Place a second tortilla over the top and spray with more oil spray. Cook on medium low for about 4 minutes on each side or until the tortilla is crupsy and the cheese is melty. Repeat this for all of your quesadillas.
- Serve the quesadillas with the special sauce and enjoy!
