Strawberry Crunch Cheesecake

Sweet, creamy, and topped with crunchy strawberry crumble—this strawberry crunch cheesecake is a no-bake favorite with major wow factor.

Ingredients 

  • 20-25 golden Oreo cookies
  • 4 tbsp butter, melted
  • 2-8 oz blocks cream cheese, softened
  • 1 tbsp vanilla extract
  • 2 tsp lemon juice
  • 1 ½ cups powdered sugar
  • 8 oz container cool whip, thawed
  • ¾ cup mashed strawberries

Strawberry Shortcake Crumble:

  • 12 golden Oreo cookies
  • ½ cup freeze dried strawberries
  • 3 tbsp melted butter

Instructions 

  • Make the crust: crush the 20-25 Oreos in a bag with a meat mallet or food processor. Add in 4 tbsp melted butter and coat well.
  • Press the Oreo butter mixture to the bottom of a springform pan or 8×8 baking dish. Place in the freezer to set for 10 minutes.
  • Make the cheesecake filling: to a medium sized bowl add in the cream cheese, vanilla extract, lemon juice, and powdered sugar beat well until smooth. Stir in the cool whip. Divide the cheesecake  filling into two bowls making 1/2 in each bowl. Stir the mashed strawberries into one of the bowls. 
  • Spread the strawberry cheesecake mixture over the Oreo crust. Spread the regular remaining cheesecake mixture over the strawberry mixture. Refrigerate for 2 hours

Make the strawberry shortcake topping:

  • To a food processor add in the 12 Oreos and process until ground. Add in the freeze dried strawberries and process again. Add in the 3 tbsp melted butter and process one last time. Sprinkle on top of the cheesecake and enjoy!!!!!
