
Lentil Soup
Ingredients
- 1 onion, chopped
- 3 carrots, chopped
- 3 cloves garlic, pressed
- 1 can green chiles, to taste
- 14 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup lentils
- 3 tsp Herbs de Provence
- Salt and pepper, to taste
- 1 tbsp olive oil
- Lime wedges, optional
- Shredded cheese, optional
- Sour cream, optional
Instructions
- In a large pot or Dutch oven, heat the olive oil. Next, add carrots and onion to pot. Let them soften for about 5 minutes, then press in the garlic and stir until fragrant.
- Add all remaining ingredients into the pot. Cover with lid, then bring to a simmer. Stir occasionally, for 30 minutes.
- Serve with toppings of choice – lime wedges, shredded cheese, sour cream etc. Enjoy!

I’ve never heard of “herbs de providence” – did you mean herbs de provence?
Are there other herbs/herb mixtures that could be used?
