Alfredo Chicken Broccoli Skillet Lasagna

2 tbs olive oil
1 tbs minced garlic
2 1/2 cups chicken broth
1 1/2 cups heavy cream
1 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
10 lasagna noodles broken into bite sized pieces
3 cups rotisserie chicken, shredded
12 oz frozen broccoli florets
1 cup mozzarella cheese, shredded
Directions
- To a large deep skillet over medium heat add the oil once hot add in the garlic and stir for about 20 seconds or until it’s fragrant. Stir in the broth, heavy cream, seasonings, broken lasagna noodles, and rotisserie chicken. Bring up to a simmer and let simmer stirring frequently for 15 minutes, if the liquid gets too low add in 1/2 cup of water in at a time. Stir in the frozen broccoli and continue to simmer for 5-7 more minutes or until the pasta is tender. Stir in the mozzarella cheese once melted enjoy!
Made this tonight and it was a huge hit! All my kids loved it and asked when Iβm making it again lol It didnβt thicken like yours for some reason so I just make a corn starch slurry and that worked perfectly. Iβd love to try this with mushrooms and onions instead of the broccoli too. We served with yeast rolls, thanks for another delicious and simple recipe Julia!
