Alfredo Chicken Broccoli Skillet Lasagna

There’s no better duo than Alfredo sauce and pasta! This Alfredo Chicken Broccoli Skillet Lasagna is a unique and delicious take on classic pasta dishes.

Ingredients

  • 2 tbsp olive oil

  • 1 tbsp minced garlic

  • 2 1/2 cups chicken broth

  • 1 1/2 cups heavy cream

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tsp Italian seasoning

  • 10 lasagna noodles, broken into bite-sized pieces

  • 3 cups rotisserie chicken, shredded

  • 12 oz frozen broccoli florets

  • 1 cup mozzarella cheese, shredded

Directions

  • To a large skillet over medium heat, add the oil. Once hot, add in the garlic and stir for about 20 seconds, or until it’s fragrant.
  • Stir in the broth, heavy cream, seasonings, broken lasagna noodles, and rotisserie chicken. Bring up to a simmer and let cook, stirring frequently, for 15 minutes. If the liquid gets too low, add in 1/2 cup of water at a time.
  • Stir in the frozen broccoli and continue to simmer for 5-7 more minutes, or until the pasta is tender. Stir in the mozzarella cheese. Once melted, serve and enjoy!

    The whole family loved this, my 11yo even took leftovers for lunch the next day! That is saying something because she really doesn’t usually like dinner. I used better than bouillon to make the broth. And I replaced the heavy cream with whole milk. It was great!

    Made this tonight and it was a huge hit! All my kids loved it and asked when Iโ€™m making it again lol It didnโ€™t thicken like yours for some reason so I just make a corn starch slurry and that worked perfectly. Iโ€™d love to try this with mushrooms and onions instead of the broccoli too. We served with yeast rolls, thanks for another delicious and simple recipe Julia!
