2 tbs olive oil
1 lb chicken breast, cubed
2 tsp Italian seasoning
1 tsp salt
1/2 tsp pepper
2 tbs minced garlic
1/2 cup sun dried tomatoes, chopped
2 cups frozen broccoli, chopped into bite sized pieces
1/2 cup chicken broth
1/2 cup heavy cream
1 cup Colby jack cheese, shredded
- To a large skillet over medium heat add the oil once oil is hot add cubed chicken season with the Italian seasoning, salt and pepper stir to coat chicken in the seasonings. Cook chicken for 3-4 minuets on each side or until cooked through.
- Once chicken is cooked stir in the minced garlic for 30 seconds or until fragrant.
- Now add in the chopped sun dried tomatoes, chopped broccoli, and chicken broth stir well. Let simmer for 3-5 minutes or until the broccoli is to the tenderness you like it to be.
- Turn heat to low and stir in heavy cream and cheese once the cheese is melty enjoy! We like to eat this over a bed of white rice or egg noodles!
