Beef Taquitos

1 lb ground beef
2 tbs taco seasoning
1/4 cup water
1/3 cup Mexican style cheese
4 tbs olive oil
12 Count Mission Street Taco Flour Tortillas, 11 Oz
- Cornstarch Slurry
1/4 cup water
1 tbs cornstarch
Directions
- To a skillet brown the ground beef, once cooked remove any access grease add the taco seasoning and 1/4 cup of water in simmer for 5 minutes stirring frequently. Stir the cheese in.
- To a small bowl whisk the cornstarch slurry together.
- Warm the tortillas in the microwave for about one minute – wrapped around a damp paper towel. (this will prevent the tortillas from cracking when rolling)
- To assemble: Put a small scoop of the ground beef mixture in the middle of a tortilla roll, on the edge of the tortilla brush a small amount of the cornstarch slurry on so the tortillas don’t come unrolled. Repeat.
- To a skillet on the stove over medium heat add the olive oil, once the oil is hot in batches add the taquitos and fry for about 30 seconds on each side or until golden brown. Remove to a plate lined with paper towel. Enjoy with your favorite toppings!
