Broccoli Cheese Soup – One Pot

This broccoli cheese soup is cheesy, comforting, and comes together easily in one pan for a fuss-free classic.

Ingredients 

  • ¼ cup unsalted butter
  • ½ cup diced onions
  • 1 cup shredded carrots
  • 3 cups broccoli florets, chopped
  • 1 ½ cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • ¼ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp pepper
  • 1 ½ cups shredded cheese
  • Optional: Dash of crushed red pepper flakes

Instructions 

  • In a large pot add the butter let it melt down. Add in the onions, carrots and broccoli cook to soften about 5-7 minutes. Stir frequently.
  • Stir the flour in.
  • Stir in broth, milk, cream, salt and pepper. Gently let simmer for 10 minutes or until the soup has thickened, stir frequently.
  • Once thick add the cheese in and stir well. Enjoy.

    This recipe was so simple and delicious! I’ve tried many broccoli cheese soup recipes before and none compare. I did add a little more broth to get the consistency I wanted, but I cannot recommend this recipe enough. Thank you, Julia!

    Ok this is my new broccoli cheese soup recipe. I used to use a Panera recipe, it had 1/2 1/2 instead of cream. Well obviously this one with cream is way better!! I would always mess the other recipe up bc I curdled the milk and half n half. This time I used the same type of pot she did and it seemed to work better as far as distributing the heat.

    Anyway, I digress. 5/5 for sure!! So good! I can’t wait to try your potato soup recipe!!

    This is the best cheese broccoli soup I’ve ever had! The only thing I changed was I used some onion powder instead of an actual onion because I didn’t realize I was out of them.

    I’m vegetarian, so I’d want to substitute something for the chicken broth, but still get a good-flavored soup. Would using a veggie broth still give it a good flavor?
