Broccoli Cheese Soup – One Pot

1/4 cup unsalted butter
1/2 cup diced onions
1 cup shredded carrots
3 cups broccoli florets, chopped
1 1/2 cups chicken broth
1 cup milk
1 cup heavy cream
1/4 cup all-purpose flour
1 tsp salt
1/2 tsp pepper
1.5 cups shredded cheese
Optional: Dash of crushed red pepper flakes
Directions
- In a large pot add the butter let it melt down. Add in the onions, carrots and broccoli cook to soften about 5-7 minutes. Stir frequently.
- Stir the flour in.
- Stir in broth, milk, cream, salt and pepper. Gently let simmer for 10 minutes or until the soup has thickened, stir frequently.
- Once thick add the cheese in and stir well. Enjoy

I’m vegetarian, so I’d want to substitute something for the chicken broth, but still get a good-flavored soup. Would using a veggie broth still give it a good flavor?
This is the best cheese broccoli soup I’ve ever had! The only thing I changed was I used some onion powder instead of an actual onion because I didn’t realize I was out of them.
