Broccoli Cheese Soup – One Pot

Ingredients

  • 1/4 cup unsalted butter

  • 1/2 cup diced onions

  • 1 cup shredded carrots

  • 3 cups broccoli florets, chopped

  • 1 1/2 cups chicken broth

  • 1 cup milk

  • 1 cup heavy cream

  • 1/4 cup all-purpose flour

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1.5 cups shredded cheese

  • Optional: Dash of crushed red pepper flakes

Directions

  • In a large pot add the butter let it melt down. Add in the onions, carrots and broccoli cook to soften about 5-7 minutes. Stir frequently.
  • Stir the flour in.
  • Stir in broth, milk, cream, salt and pepper. Gently let simmer for 10 minutes or until the soup has thickened, stir frequently.
  • Once thick add the cheese in and stir well. Enjoy

  2. I’m vegetarian, so I’d want to substitute something for the chicken broth, but still get a good-flavored soup. Would using a veggie broth still give it a good flavor?

  3. This is the best cheese broccoli soup I’ve ever had! The only thing I changed was I used some onion powder instead of an actual onion because I didn’t realize I was out of them.
