Broccoli Stir Fry

Crispy-tender broccoli and chicken tossed in a savory, garlicky sauce—this quick Broccoli Stir Fry is a weeknight hero that’s healthy, flavorful, and ready in minutes!

Ingredients 

  • 5 tbs olive oil
  • 1 lbs cubed chicken breast
  • 3 cups fresh broccoli, cut into smaller pieces
  • 1 dash salt and pepper
  • 1 tbs minced garlic
  • 1 tbs minced ginger

Sauce

  • ¼ cup low sodium soy sauce
  • ¼ cup water
  • ¼ cup honey

Cornstarch Slurry

  • 2 tbs water
  • 1 tbs cornstarch

Instructions 

  • Add 3 tbs olive oil to a skillet once it’s hot add the broccoli in and let it cook until soft, about 5 minutes. (Add 2 tbs of water in while cooking if you want you broccoli softer)
  • Once cooked remove the broccoli to a separate plate
  • Add 2 tbs olive oil to a skillet the chicken sprinkle with salt and pepper cook the chicken to 165 degrees
  • In a small bowl add the sauce in and whisk to combine
  • Mix together the cornstarch slurry
  • Once chicken is cooked add the ginger and garlic in stir until fragrant then back in the broccoli, the sauce, and the cornstarch slurry stir until thick. Serve over rice enjoy
