Butter Chicken Casserole

All the creamy, spiced flavor of butter chicken baked into a cozy casserole—this butter chicken casserole is a simple dinner with big flavor.

Ingredients 

  • 1 cup uncooked jasmine rice
  • 3 tbsp butter, melted
  • 1 ½ cups chicken broth
  • 1 tbsp minced garlic
  • 14 oz can fire roasted diced tomatoes
  • 1 ½ lbs chicken thighs, cubed
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp garam masala seasoning
  • 1 tsp ground ginger
  • Toppings: lime, cilantro, sour cream and naan bread on the side

Instructions 

  • Preheat oven to 350 degrees F.
  • Spray a 9 x 13 baking dish with nonstick spray add in the rice, butter, broth, minced garlic, diced tomatoes, chicken and seasonings stir well. Cover tightly with foil and bake for 45 minutes.
  • Once the rice is tender remove the foil stir and bake for an additional 15 minutes. Top with your favorite toppings.

    I didn’t see an oven temperature, so I set it to 400F and it turned out great! My 1-year-old loved it!
