Caprese Chicken
Ingredients
- 2 tbsp olive oil
- 1 lb chicken breast, cubed
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Italian seasoning
- 1 cup cherry tomatoes, sliced
- 12 oz container fresh mozzarella pearl salad , and 1/2 of the amount of the oil/liquid in the container
- 1 tbsp balsamic vinegar
Instructions
- To a large pan on the stove over medium heat add the oil once the oil is hot add in the seasonings. Cook the chicken for 4- 5 minutes on each side or until it is completely cooked through.
- Once the chickens cooked stir in the tomatoes, mozzarella pearls, and balsamic vinegar. Serve and enjoy.

I made this tonight. It was okay I didn’t really enjoy the flavor or how watery mine was. I did serve it with rice and that made it better.
Could I serve this over rice?
