Caprese Chicken

This caprese chicken combines juicy chicken, fresh tomatoes, mozzarella, and basil for a quick, flavorful meal with a balsamic glaze finish.

Ingredients 

  • 2 tbsp olive oil
  • 1 lb chicken breast, cubed
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 1 cup cherry tomatoes, sliced
  • 12 oz container fresh mozzarella pearl salad , and 1/2 of the amount of the oil/liquid in the container
  • 1 tbsp balsamic vinegar

Instructions 

  • To a large pan on the stove over medium heat add the oil once the oil is hot add in the seasonings. Cook the chicken for 4- 5 minutes on each side or until it is completely cooked through.
  • Once the chickens cooked stir in the tomatoes, mozzarella pearls, and balsamic vinegar. Serve and enjoy.

    I made this tonight. It was okay I didn’t really enjoy the flavor or how watery mine was. I did serve it with rice and that made it better.
