Cheeseburger Soup – Slow Cooker

3 medium russet potatoes, peeled and diced
1 white onion, chopped
3 large carrots, shredded
1 cup diced celery
1 tsp dried basil
1 tsp dried parsley
3 cups chicken broth
1 lb ground beef
3 tbs butter
1/4 cup all purposes flour
2 cups milk
1/2 tsp salt
1/2 tsp pepper
2 cup shredded cheddar cheese OR 16oz cubed Velveeta cheese
Directions
- Add the potatoes, onion, carrots, celery, basil, parsley, and chicken broth in your slow cooker. Stir. Cover and cook on LOW for 6-8 hours or HIGH for 4-5 hours.
- 45 minutes before serving, to a skillet on the stove add the ground beef and cook through. Remove any access grease then place the ground beef into the slow cooker. To the same pan you cooked the ground beef in add the butter and let it melt. Once melted whisk in flour and continue to cook for 1 minute or until golden brown. Slowly whisk in milk, salt and pepper. Pour this mixture into the slow cooker, stir to combine.
- Add in the cheese, stir and cook for an additional 30 minutes or until the cheese is melty. Enjoy!

Made this tonight with jiffy corn muffins. It was delicious.
Me and my husband love the soup! Only thing is I don’t make it over the crockpot and I don’t put in the flour mixture but other than that we love this! I sometimes use ground turkey to make it more healthy and I even add a little macaroni noodles for some fun lol
