Chicken Bacon Ranch Rice Casserole

Chicken bacon ranch rice casserole is creamy, cheesy, and loaded with the classic flavor combo you love.

Ingredients 

  • 7 strips bacon, cut into bite sized pieces
  • 1 white onion, diced
  • 1 lb chicken breast, cubed
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 cup uncooked jasmine rice, rinsed
  • 2 ½ cups chicken broth
  • 2 ½ tbs ranch seasoning
  • 1 cup sharp cheddar cheese, shredded

Instructions 

  • To a large saute pan or dutch oven over medium heat add the bacon and cook the bacon through. Once cooked with a slotted spoon remove the bacon from the pan on to a plate lined with paper towel. Leave the bacon drippings in the pan.
  • To the same pan we cooked the bacon in add the diced onion, chicken, salt, and garlic powder stir well and brown the chicken on each side.
  • Add in the rice, broth, and ranch seasoning stir well and bring up to a simmer turn the heat to low and let simmer covered for 18-22 minutes stirring occasionally until the rice is tender.
  • Add back in the cooked bacon and cheese stir well to melt the cheese. Enjoy!
