Chicken Tacos

Juicy, seasoned chicken tucked into warm tortillas and topped with all your favorites—these Chicken Tacos are quick, easy, and always a hit on taco night!

Ingredients 

Chicken ingredients

  • 1 lb boneless skinless chicken thighs, cubed (or chicken breast)
  • 1 tbs minced garlic
  • 3 tbs lime juice
  • 2 tbs olive oil
  • 1 tbs chili powder
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 1 dash salt and pepper
  • 6 small flour tortillas, or corn tortillas for the end

Pico de Gallo (optional)

  • 1 white onion, diced
  • 3 roma tomatoes, diced
  • ½ cup cilantro, chopped
  • 1 jalapeño, diced
  • 1 lime, juiced
  • 1 dash salt and pepper

Instructions 

  • In a medium sided bowl add the Pico de Gallo ingredients and stir to combine. Place in the refrigerator while you work on the chicken.
  • In a medium sided bowl add the cubed chicken with the rest of the chicken ingredients besides the tortillas. Stir to combine. To a hot skillet on the stove add the chicken and cook for 3-6 minutes on each side or until the chicken is cooked.
  • Crisp the tortillas in skillet on the stove with a little oil in it. Fill the tortillas with plenty of the and Pico de Gallo. Enjoy.

    This recipe was sooooo good. I would even make this if I was having people over. It’s so simple, can easily be prepped ahead of time. I like making the pico, and having the chicken marinate in the morning when I have a few minutes then it’s a really quick dinner!! This is better than take out.
