Ingredients for Creamy Chicken Tacos

Now, I do not claim this recipe is authentic Mexican food. It’s definitely a super Americanized version of tacos, but that does not change the fact that it is so dang delicious.

This three-ingredient chicken ends up surprisingly flavorful and delicious, thanks to the cream cheese. You might not suspect that this ingredient would be perfect for tacos, but it is.

I usually have cream cheese in my fridge, since I love it so much, and I usually have a jar of salsa hiding in the back of my pantry too. If I have these two things on hand, I know what I’m making for dinner!

  • chicken breasts
  • cream cheese
  • salsa (you can use any variety or brand of salsa)
  • tortillas (I like to use flour tortillas, but you could use corn as well)
  • Toppings like shredded lettuce, shredded cheese, diced tomatoes, cilantro, lime wedges, avocado, more salsa

How to Make Creamy Chicken Tacos

This recipe could not be easier. All you have to do is add the chicken, cubed cream cheese, and salsa to a greased slow cooker and cook on LOW for 6 hours or HIGH for 4 hours.

Once the chicken is cooked, shred it with a hand mixer or meat masher. This will shred the chicken and mix up the sauce nicely as well.

Serve the chicken in tortillas and top with your favorite toppings. You could also use this chicken in burritos. This would also be great in burrito bowls over rice and canned beans.

Ingredients

  • Chicken Tacos
  • 1.5 lbs chicken breasts

  • 6 oz cubed cream cheese

  • 1 cup salsa (any brand)

  • Tortillas

  • Toppings
  • Shredded lettuce

  • Shredded cheese

  • Diced Tomatoes

  • Cilantro

Directions

  • To a greased slow cooker, add the chicken, cubed cream cheese, and salsa. Cook on LOW for 6 hours or HIGH for 4 hours or until the chicken is cooked.
  • Once the chicken is cooked shred it in the slow cooker and stir well. Serve in tortillas with your favorite toppings!

  2. Hi! Can I make crock pot recopies on a stove top?

    • I have used my oven in lieu of a crock pot many times using a dutch oven for the pot. I run my oven between 195 and 225 depending on low or high crock pot time.

  6. I made this tonight. Did the low for 6 hours. Pulled out the chicken, shredded on it’s own. Used street taco corn tortillas. Warmed tortillas, placed chicken then layered sauce on top with cheese. Excellent. My husband doesn’t like saucey.. easy to modify.

  7. Super easy! Very creamy and delicious. Would be great as an enchilada filling too. I added a little cumin, chilli powder and garlic powder for a bit of extra flavour.
