Creamy Ham and Potato Casserole

Creamy ham & potato casserole is rich, cheesy, and perfect for using up leftover ham in a satisfying bake.

Ingredients 

  • 28 oz bag potatoes o’brien
  • 8 oz cubed ham
  • ¾ cup sour cream
  • 10 oz can cream of chicken soup
  • 1 cup colby jack cheese, shredded
  • ¼ cup tomato salsa

Instructions 

  • Preheat oven to 375 degrees F.
  • To a large bowl add in the potatoes o’brien, ham, sour cream, cream of chicken soup, 1/2 of the cheese, and salsa stir well.
  • Spray a large casserole dish or 9×13 baking dish with non-stick spray add the casserole in and spread it out. Sprinkle the remaining 1/2 cup of cheese on top and bake for 40 minutes or until bubbly and golden on the top and edges. Enjoy!
