Fajita Casserole

This fajita casserole bakes up all the bold flavors of sizzling chicken fajitas in a cheesy, layered dish. No skillet required.

Ingredients 

  • 1 red onion , diced
  • 1 red bell pepper, chopped
  • 1 orange bell pepper
  • 3 cups cooked shredded chicken
  • 6 oz cream cheese, softened
  • 2 tbsp taco seasoning
  • 1 cup Monterey Jack cheese

Instructions 

  • Preheat oven to 350 degrees F.
  • To a big bowl add in the vegetables, chicken, cream cheese, taco seasoning, and 1/2 cup of the cheese stir well.
  • Spray a baking dish with nonstick spray add the casserole in and spread it out sprinkle the remaining cheese over the top cover with foil and bake for 35 minutes. Remove the foil and bake for an additional 14 minutes.
