Italian Chicken – One Pot

This Italian chicken dish combines garlic, herbs, and tender chicken simmered in one pot for a rustic, Italian-inspired dinner with easy cleanup.

Ingredients 

  • 3 Tbs olive oil
  • 1 ½ lbs chicken breasts
  • 2 cups grape tomatoes, halved
  • 1 dash salt and pepper
  • ½ cup onion, chopped
  • 1 Tbs minced garlic
  • ½ tsp italian seasoning
  • 4 cups baby spinach
  • ¼ cup fresh basil, copped
  • ¼ cup shredded parmesan cheese

Instructions 

  • Heat oil in a large skillet add in the chicken season with salt pepper and Italian seasoning. Cook the chicken until it’s 90% of the way cooked. Add in the diced onion and continue to cook the chicken until its cooked through and the onion is soft.
  • Stir in the tomatoes in continue to cook for 2 minutes.
  • Add in the basil and spinach stir well cook until the spinach wilts down.
  • Add the Parmesan cheese stir to melt it down and serve.
