Lemon Chicken Orzo

Lemon chicken orzo is light, zesty, and comforting—ready in one pot for an easy dinner.

Ingredients 

  • 1 tbs butter
  • 1 tbs olive oil
  • ½ white onion, diced
  • 1 tbs minced garlic
  • 1 tsp Italian seasoning
  • 1 cup uncooked orzo
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 lemon juiced
  • 2 cups cooked shredded chicken
  • ½ cup shredded parmesan cheese
  • 4 cups fresh spinach

Instructions 

  • To a large skillet or pot over medium heat add the butter and olive oil. Once the butter is melted add in the diced onion and sauté for 3-4 minutes or until the onion is soft.
  • Add in the minced garlic, Italian seasoning and orzo stir well and let cook for 1-2 minutes.
  • Add in the chicken broth, heavy whipping cream and lemon juice stir well. Let simmer uncovered for 10 minutes stirring frequently so the orzo doesn’t stick.
  • Once the orzo is tender add in the cooked shredded chicken, parmesan cheese, and spinach stir well and let the spinach wilt down and cheese melt. Serve and enjoy!

    I LOVED this recipe and hid all the leftovers from my husband because I wanted them all to myself! I want to make this again for dinner tonight but realized I am all out of orzo but have ditalini and penne in the pantry. I wonder how to adjust the recipe to use the pasta I have?

    This was so yummy!
    I didn’t have orzo at hand so I used macaroni instead and it worked a treat. Also added a cup of frozen peas to up the veggies because I had those laying around in the freezer.
    This will definitely get into rotation for a quick weekly meal in our house 😊
