Lemon Chicken Spaghetti

Lemon Chicken Spaghetti is a bright and comforting pasta dish with tender chicken, spaghetti, and a light lemon sauce that’s both tangy and creamy. It’s quick enough for a weeknight but special enough for guests.

Ingredients 

  • 10 oz dry spaghetti noodles
  • 2 tbs butter
  • 1 tbs flour
  • 1 tbs minced garlic
  • cup chicken broth
  • 1 lemon juiced
  • 1 cup heavy cream
  • 3 cups rotisserie chicken, shredded
  • cup parmesan cheese, shredded
  • ½ tsp pepper
  • 1 tsp salt

Instructions 

  • To a pot of boiling water add in the pasta and cook according to the package directions once pasta is tender reserve 1/3 cup of the water the pastas cooking in. Drain the remaining pasta a d set to the side.
  • To a saute pan add the butter over medium heat once melted whisk in the flour until it’s a golden color it takes about 1-2 minutes. Whisk in the garlic and let it become fragrant it should take 20-30 seconds. Whisk in the broth and lemon juice bring sauce up to a simmer. Stir in the heavy cream and rotisserie chicken. Stir in the Parmesan, pepper, and salt. If you like a thinner sauce stir in the reserved pasta water at this point. Stir in the pasta and enjoy!

    This is one of the most delicious things I’ve ever eaten- ever! I always double the recipe so we have enough to eat the next day. This is out of this world amazing, and if you like lemon, you definitely have to give this a try!

    What a delightful pasta dish. My husband had two helpings. Getting a roasted chicken made it so easy. The lemon made it perfect even in the summer time. I used the lemon rind as well. Thinned the sauce with a tiny bit of white wine instead of pasta water. Delicious
