Lentil Sloppy Joes

Lentil sloppy joes are a hearty, plant-based twist on the classic—savory, saucy, and piled high on toasted buns.

Ingredients 

  • 2 cups dry lentils
  • 4 cups water
  • 1 tbs olive oil
  • ½ yellow onion, diced
  • 2 tsp salt
  • 1 tsp pepper
  • oz tomato sauce
  • ½ cup water
  • 1 tbs low sodium soy sauce
  • 2 tbs brown sugar
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 6 Hamburger Buns

Instructions 

  • Rinse the lentils well.
  • To a large pot add the water and the lentils let simmer stirring occasionally covered for 20-30 minutes or until your desired tenderness, strain the liquid out.
  • To a saute pan add the oil over medium heat once hot add in the onion stir and let saute for 4-5 minutes. Once onion starts to get soft add in the tomato sauce, soy sauce, brown sugar, and all of the seasonings stir well. Add in the strained lentils and stir let simmer for 10 minutes stirring occasionally. Serve in hamburger buns and enjoy!

    Hi! I’ve been trying your meals and am pretty happy at the speed and cheapness of them. Just so you know the recipe is wrong on here, it says 1/5oz tomato sauce and I believe you meant 15oz.
