Loaded Rice Burrito Bowls

Loaded rice burrito bowls are bursting with Tex-Mex flavor—seasoned rice, beans, veggies, and your favorite toppings.

Ingredients 

  • 5.6 oz bag Knorr Spanish rice
  • 2 cups water
  • 2 tbs olive oil
  • 1 lb chicken breast, cubed
  • 1 tbs taco seasoning
  • 15 oz can black beans, drained and rinsed
  • 14 oz can corn, drained
  • 4 oz can diced green chilis
  • cup salsa
  • ½ cup Mexican style cheese

Instructions 

  • Cook the Knorr rice + water according to the package instructions.
  • To a large skillet over medium heat add the oil once hot add in the chicken and taco seasoning stir well and let the chicken cook through. Now add in the can of black beans, corn, green chilis, salsa, and the cooked Knorr rice stir well and let simmer for 3-4 minutes stirring often. Stir in the cheese and once melted serve!

    This is a pretty versatile recipe. You can customize it to the type of burrito bowl you prefer. I added stewed tomatoes to mine and loved it, though I’m sure it would have been delicious even if I hadn’t. It was quick and easy to make, too.
