Ingredients 

  • 2 tbs olive oil
  • 1 white onion, diced
  • 1 red bell pepper, diced
  • 1 lb ground beef
  • 20 oz frozen cauliflower rice
  • 10 oz can rotel
  • 3 tbs taco seasoning
  • ½ cup water
  • cup Mexican style cheese

Instructions 

  • To a large skillet over medium heat add the oil once hot add in the onion, bell pepper, and ground beef break the ground beef up and cook it through. Once cooked remove any excess grease in the pan.
  • Add in the cauliflower rice, rotel, taco seasoning, and water stir well to combine the ingredients. Let simmer uncovered for 10 minutes stirring frequently.
  • Stir in the cheese once it melts down its ready to enjoy! We like to top our plates with avocado, sour cream, tomatoes, and cilantro!
