Marinara Beefy Rice Casserole

Ingredients 

  • 1 lb ground beef
  • 1 white onion, diced
  • 1 cup rinsed uncooked jasmine rice
  • 2 ½ cups beef broth
  • 2 tsp Italian seasoning
  • ½ tsp salt
  • 3 tbs cream cheese
  • 1 cup marinara sauce

Instructions 

  • To a large pot or dutch oven over medium high heat, add in the ground beef and onion. Break the ground beef up and cook it completely. Once browned, remove any grease in the pot. Stir in the rice, broth, and seasonings turn heat to low cover with a lid and let simmer for 15-20 minutes stirring frequently until the rice is tender. Stir in the cream cheese and marinara sauce once the cream cheese melts down serve and enjoy!

    The beef casserole with rice looks delicious. I was thinking if I make this, I will probably wrap up the entire mixture in flour tortillas and then brown them up a bit in the frying pan. Perhaps adding some jalapeno cheese (in the mixture) would be good as well.
    Just an idea!
