One Pot Chicken Curry with Rice

This one pot chicken curry with rice is bold, aromatic, and all cooked in one pan for a flavorful, no-fuss dinner.

Ingredients 

  • 1 tbsp olive oil
  • 2 lbs chicken breast, , cubed
  • 1 small yellow onion, , diced
  • 1 red bell pepper, , diced
  • 3 tsp curry powder, , divided
  • 1 tbsp salt, , divided
  • 1 tsp pepper
  • 1 cup uncooked jasmine rice
  • 2 cups chicken broth
  • 1 cup water
  • ½ cup coconut milk
  • ¼ cup fresh cilantro

Instructions 

  • To a large pot add in the oil once hot add in the cubed chicken, onion, bell pepper, 1 tsp curry powder, 1/2 tbsp salt, and pepper stir well and cook for 3-4 minutes (the chicken will not be completely cooked through) remove the chicken to a plate and set to the side.
  • To the same pot add in the rice, broth, water, 1/2 tbsp salt, 2 tsp curry powder and stir well. Bring this up to a simmer and let simmer uncovered for 3 minutes while stirring occasionally. Now add back in the chicken cover with a lid and let simmer covered for 15-18 minutes stirring occasionally so the rice doesn’t stick to the bottom of the pot, until the rice is tender and the chicken is cooked through.
  • Once the rice is tender add in the coconut milk and cilantro, stir well and enjoy!

    This recipe is a hit! I admit I was leery of the amount of salt so I added much less and then had to add more at the end so I should have just stuck with the original suggestion. This tastes even better the next day. Makes quite a big batch too and I have frozen some of it. Thanks for another great recipe, Julia 🙂

    Great flavor! The salt level was a little high for my taste, which makes me question the 1/2 tbs of salt added to the water and chicken broth when adding the rice? But super good flavor and I was able to tame down the salt level by adding a little lime juice at the end when I added the coconut milk. I will definitely be making this again though! Another great recipe by Julia.
