Ingredients

  • 1 lb ground beef , *or you can use ground Italian sausage, ground turkey, or ground chicken as a substitute*
  • 1 yellow onion, , diced
  • 1 tbsp minced garlic
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup uncooked orzo
  • 1 cup beef broth
  • 14 oz tomato sauce
  • 1 cup heavy cream
  • ¾ cup water
  • 2 cups fresh chopped spinach
  • cup parmesan cheese

Instructions

  • To a large Dutch oven or pot on the stove add the ground beef and onion, break the ground beef up and crumble with a spatula or meat masher, cook the meat through. Once cooked remove any excess grease in the pot.
  • Now add in the minced garlic, seasonings, and orzo stir well for 15 seconds. Add in the beef broth, tomato sauce, and heavy cream stir well. Let simmer for 3 minutes *stirring often* so the orzo doesn’t stick to the bottom of the pot.
  • Stir in the water, chopped spinach, and Parmesan cheese, let simmer covered with the lid for 10 minutes *stirring occasionally so the orzo doesn’t stick* until the orzo is cooked through and tender. Enjoy!

I thought this was really good! I worried it would be too rich but it was just right. Only used about half the salt it called for or maybe a bit less bc I used better than bullion broth and that seemed plenty salty. Also I didn’t have orzo so I used small macaroni and that worked well. It’s fairly meat heavy on the meat to pasta ratio but that’s okay. It was very good.

This is such a quick and delicious meal! I saw Julia prepare it on her video and made for dinner that night. My family loved it, even the picky eaters!!
