One Pot Tomato Chicken Feta Pasta features juicy chicken, tangy feta, and tender pasta tossed in a rich tomato sauce — all made in a single pot for easy cleanup.

Ingredients 

  • 2 tbs olive oil
  • 1 lb chicken tenderloins
  • 1 tsp pepper
  • 1 tsp salt
  • 2 tsp Italian seasoning
  • 2 ½ cups chicken broth
  • 2-14 oz cans Italian style petite diced tomatoes
  • 12 oz spaghetti noodles
  • 5 oz feta cheese crumbles
  • ¼ cup fresh basil, optional

Instructions 

  • Season the chicken on both sides. To a large pot or dutch oven over medium heat, add in the oil and once cook the chicken for 5-6 minutes on each side or until the chicken is completely cooked through. Remove the cooked chicken to a separate plate and set to the side.
  • In the same pot we cooked the chicken in, add in the broth, diced tomatoes and noodles and stir well. Simmer for 15 minutes stirring frequently until the pasta is cooked *If the liquid line gets too low add in 1/2 cup of water in at a time until the pasta is tender* add in the feta cheese, basil, and the cooked chicken stir well then serve!
