Parmesan Chicken & Zucchini

Juicy chicken, sautéed zucchini, and a sprinkle of parmesan come together in this light, flavorful skillet meal. It’s fresh, simple, and ready in a flash—perfect for busy nights!

Ingredients 

  • 1 lb cubed chicken breast
  • 4 tbs olive oli
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp italian seasoning
  • 1 dash salt and pepper
  • 2 medium zucchinis, diced
  • 2 medium yellow squashes, diced
  • Juice from ½ lemon
  • ½ cup parmesan cheese

Instructions 

  • Heat 2 tbs olive oil in a skillet the add the cubed chicken season with 1 tsp of garlic powder, onion powder, italian seasoning and a dash of salt and pepper cook the chicken through then remove it to a separate plate.
  • In the same skillet add the last 2 tbs of olive oil then add the zucchini and squash with 1 tsp of garlic powder, onion powder, and italian seasoning cook until soft, about 5 minutes.
  • Add the cooked chicken in with the zucchini and squash. Add the lemon juice and parmesan cheese stir to combine then serve.
