Parmesan Garlic Chicken and Rice

Savory chicken, garlicky rice, and melty Parmesan come together in one cozy skillet for an easy dinner win.

Ingredients 

  • 2 tbs olive oil
  • 1 lb chicken breast , cut into strips
  • ½ tsp italian seasoning
  • ½ tsp garlic powder
  • 1 dash salt and pepper
  • 1 tbs butter
  • 1 tbs minced garlic
  • ¼ tsp crushed red pepper flakes
  • 1 cup white rice, rinsed
  • 2 cups chicken broth
  • ¼ cup parmesan cheese

Instructions 

  • In a large sauce pan add the oil once it's hot add the chicken and seasonings in. Cook the chicken for 3-5 minutes on each side on medium heat until the chicken is cooked through.
  • Remove the chicken to a separate plate and set aside.
  • Add butter, garlic, and crushed red pepper in cook together for about 30 seconds.
  • Add in the rice and saute for about 3 minutes. Add the broth in and bring it up to a simmer, cover for 5-7 minutes (stir frequently) then uncover and continue to simmer for 5 minutes or until the rice is tender. You might need to add more broth in if all of the water evaporates.
  • Once the rice is tender add the cooked chicken back in with the parmesan cheese stir to combine then serve.
