
Parmesan Garlic Chicken and Rice
Ingredients
- 2 tbs olive oil
- 1 lb chicken breast , cut into strips
- ½ tsp italian seasoning
- ½ tsp garlic powder
- 1 dash salt and pepper
- 1 tbs butter
- 1 tbs minced garlic
- ¼ tsp crushed red pepper flakes
- 1 cup white rice, rinsed
- 2 cups chicken broth
- ¼ cup parmesan cheese
Instructions
- In a large sauce pan add the oil once it's hot add the chicken and seasonings in. Cook the chicken for 3-5 minutes on each side on medium heat until the chicken is cooked through.
- Remove the chicken to a separate plate and set aside.
- Add butter, garlic, and crushed red pepper in cook together for about 30 seconds.
- Add in the rice and saute for about 3 minutes. Add the broth in and bring it up to a simmer, cover for 5-7 minutes (stir frequently) then uncover and continue to simmer for 5 minutes or until the rice is tender. You might need to add more broth in if all of the water evaporates.
- Once the rice is tender add the cooked chicken back in with the parmesan cheese stir to combine then serve.
