Pizza Pasta Bake

Ingredients 

  • 14 oz petite diced tomatoes
  • 1 ½ cups marinara sauce
  • 2 tsp Italian seasoning
  • ½ tsp pepper
  • 1 tsp salt
  • 1 lb chicken breast
  • 1 tbs cornstarch
  • 1 tbs water
  • 1 cup mozzarella cheese
  • cup pepperonis
  • 10 oz pasta

Instructions 

  • Preheat oven to 400 degrees F.
  • Slice the chicken breasts in half horizontally to make them thin. To a large baking dish add the diced tomatoes, marinara sauce, and seasonings stir well. Place the chicken in the baking dish and coat with the sauce. Bake for 35-45 minutes or until the chicken is cooked.
  • Make the cornstarch slurry. To a small bowl add the cornstarch and water and stir to combine. Once the chicken is out of the oven stir the cornstarch in and sprinkle the cheese and pepperoni on top bake for an additional 10-15 minutes.
  • To a pot of boiling water add the pasta and cook according to the package directions. Drain and set to the side. Top the pasta with the chicken, pepperoni, and sauce enjoy!
