Potato Turkey Bacon Casserole

Ingredients

  • 2 tbs olive oil

  • 1/2 yellow onion, diced

  • 1/2 lb ground turkey

  • 1 tsp pepper

  • 1/2 tsp salt

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 3 large potatoes, shredded

  • 8oz sour cream

  • 2.5oz real bacon bits

  • 4oz cheddar cheese, shredded

Directions

  • Preheat oven to 375 degrees.
  • To a large skillet over medium heat add the oil once itโ€™s hot add in the onion, turkey, and half the amount of all of the seasonings break the turkey up and cook it through.
  • To a large bowl all the shredded potatoes, sour cream, cooked turkey mixture, bacon bits, and the remaining seasonings. Stir well. Place into a large casserole dish. Sprinkle with cheese. Bake for 30-35 minutes. Enjoy!
