Potato Turkey Bacon Casserole

Potato Turkey Bacon Casserole combines tender potatoes, lean turkey, and crispy bacon in a creamy, cheesy bake that’s hearty enough for a family dinner.

Ingredients 

  • 2 tbs olive oil
  • ½ yellow onion, diced
  • ½ lb ground turkey
  • 1 tsp pepper
  • ½ tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 large potatoes, shredded
  • 8 oz sour cream
  • 2.5 oz real bacon bits
  • 4 oz cheddar cheese, shredded

Instructions 

  • Preheat oven to 375 degrees F.
  • To a large skillet over medium heat add the oil once it’s hot add in the onion, turkey, and half the amount of all of the seasonings break the turkey up and cook it through.
  • To a large bowl all the shredded potatoes, sour cream, cooked turkey mixture, bacon bits, and the remaining seasonings. Stir well. Place into a large casserole dish. Sprinkle with cheese. Bake for 30-35 minutes. Enjoy!

    This was really good. I used a whole lb of Turkey breakfast sausage because that’s what I had and my husband asked me to add it to the rotation! Made left overs for lunches as well.
