Potato Veggie Skillet

Loaded with crispy potatoes and colorful vegetables, this potato veggie skillet is a quick and wholesome meal with endless add-in options.

Ingredients 

  • 2.5 lbs russet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 12 oz package hot dogs, sliced into half moons
  • 2 cloves garlic
  • ½ cup frozen spinach
  • ½ cup frozen peppers and onions
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp chili powder
  • ½ cup water

Instructions 

  • To a large skillet over medium high heat add the olive oil and butter once the butter melts add the potatoes, hot dogs, garlic, spinach, peppers onions, and seasonings stir well cover with a lid and let cook on medium low heat for 15 minutes stirring occasionally.
  • During the last 5 minutes stir in the water and scrape the bottom of the pan. Serve
