Seasoned Chicken & Veggies

Ingredients 

  • 1 lb cubed chicken breast
  • 2 medium zucchini, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, sliced

Marinade

  • 2 tbs olive oil
  • 1 tsp Italian seasoning
  • 2 tbs red wine vinegar
  • 1 tbs soy sauce
  • 1 tsp dijon mustard
  • 1 dash salt and pepper
  • 1 tbs minced garlic

Instructions 

  • In a large bowl mix all of the ingredients together, cover and place in the fridge for at least 30 minutes
  • Preheat oven to 400 degrees
  • Place the chicken mixture on a sheet pan lined with parchment paper bake for 25 minutes or until the chicken is cooked, broil for an additional 2 minutes

    Trying this tonight. I just put everything in a ziplock before work and letting it sit all day in fridge. Will let you know how it turns out. Love your site every thing I have made has been great. I use one of your recipes every night this last month and it has been great! I have done Crock pot meals, sheet pan meals, casseroles and all have been right on! Thank you for making cooking fun again!

      I tried what you said about pre making it before work and I just got done baking it after letting it marinate for 8 hours and wow this is delicious! I didn’t have zucchini so used potatoes instead and it turned out so hearty and amazing! A new recipe to add to the rotation for sure, my husband loved it SO much too!
