Ingredients

  • 1 yellow onion, diced

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 1 1/2 lbs chicken breast, cubed

  • 3 tbs olive oil

  • 1 tsp cumin

  • 1 tsp onion powder

  • 1 tsp oregano

  • 1 tsp chili powder

  • 1 lime juiced

  • Optional toppings for the end:
  • Cooked white rice, black beans, shredded lettuce, sliced tomatoes, avocados, cilantro, sour cream and anything else you’d like.

Directions

  • Preheat oven to 425 degrees
  • To a large bowl add the chicken oil, seasonings, and lime juice
  • Line a large sheet pan with parchment paper place the peppers, onions, and the chicken mixture on the sheet pan spread it out. Bake for 25 minutes or until the chicken is completely cooked through.
  • Place the chicken and peppers on a bowl with your favorite burrito bowl toppings, cooked white rice, black beans, shredded lettuce, sliced tomatoes, avocados, cilantro, sour cream and anything else you’d like.

  1. Julia, I made your burrito bowl sheet pan meal and served over cilantro lime rice (from a box). Did not have any limes or lime juice but everything else was made exact. It was so good! I flavored the black beans just a bit with garlic and onion powder. Absolutely delicious!! I wish I could post a picture though but that is OK. Thanks again! Oh, and I had red and yellow bell peppers instead of green.
