
Sheet Pan Burrito Bowls
Ingredients
Chicken
- 1 yellow onion, diced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 ½ lbs chicken breast, cubed
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp chili powder
- 1 lime juiced
Burrito bowls
- cooked white rice
- toppings like black beans, shredded lettuce, sliced tomatoes, avocados, cilantro, sour cream
Instructions
- Preheat oven to 425℉.
- Combine the chicken, oil, seasonings, and lime juice in a large bowl and stir to coat evenly.
- Line a large sheet pan with parchment paper. Spread the peppers, onions, and chicken on the sheet pan. Bake for 25 minutes or until the chicken reaches an internal temperature 165℉.
- Place the chicken and peppers in bowls over cooked rice, along with your favorite toppings. Enjoy!

Julia, I made your burrito bowl sheet pan meal and served over cilantro lime rice (from a box). Did not have any limes or lime juice but everything else was made exact. It was so good! I flavored the black beans just a bit with garlic and onion powder. Absolutely delicious!! I wish I could post a picture though but that is OK. Thanks again! Oh, and I had red and yellow bell peppers instead of green.
