Sheet Pan Burrito Bowls

Build burrito bowls with zesty lime chicken, fajita veggies, rice, and all of your favorite toppings.

Ingredients 

Chicken

  • 1 yellow onion, diced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 ½ lbs chicken breast, cubed
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 lime juiced

Burrito bowls

  • cooked white rice
  • toppings like black beans, shredded lettuce, sliced tomatoes, avocados, cilantro, sour cream

Instructions 

  • Preheat oven to 425℉.
  • Combine the chicken, oil, seasonings, and lime juice in a large bowl and stir to coat evenly.
  • Line a large sheet pan with parchment paper. Spread the peppers, onions, and chicken on the sheet pan. Bake for 25 minutes or until the chicken reaches an internal temperature 165℉.
  • Place the chicken and peppers in bowls over cooked rice, along with your favorite toppings. Enjoy!

    Julia, I made your burrito bowl sheet pan meal and served over cilantro lime rice (from a box). Did not have any limes or lime juice but everything else was made exact. It was so good! I flavored the black beans just a bit with garlic and onion powder. Absolutely delicious!! I wish I could post a picture though but that is OK. Thanks again! Oh, and I had red and yellow bell peppers instead of green.
