To make this recipe, you’ll only need a few ingredients.

  • chicken breast
  • barbecue sauce (I love Sweet Baby Ray’s brand)
  • minced garlic
  • soy sauce
  • canned pineapple chunks
  • Cooked rice, for serving

How to Make Slow Cooker Pineapple Barbecue Chicken

This one of my very favorite dump-and-go recipes. To make this, you really just have to dump everything in the slow cooker, leave it to cook on low for five hours, and come back at dinner time.

Honestly, the hardest part about this recipe is shredding the chicken. Does anybody else hate shredding chicken as much as me? Sometimes, when I’m feeling lazy, I pull out my hand mixer and shred the meat right there in the crockpot. It really only takes a couple of minutes and is not as tedious as using two forks.

What to Serve with Pineapple Barbecue Chicken

This chicken is so flavorful and tasty that you can eat it on its own and it is truly fantastic. But, if you want to jazz it up a little you can serve it a few different ways:

  • serve it up in hamburger buns topped with coleslaw for yummy pulled chicken sandwiches
  • serve on top of rice with some steamed vegetables on the side
  • add it to a green salad with pineapple, diced peppers, and green onions

Can I Freeze Pineapple Barbecue Chicken?

This meal freezes super well. What I like to do is pour all of the ingredients (uncooked) into freezer bags, and stick them in the freezer. When you want to eat it, let it thaw in the fridge overnight, and throw in the slow cooker and cook as the directions indicate.

Ingredients 

  • 1.5 lbs chicken breast
  • 1 cup barbecue sauce
  • 1 tbsp minced garlic
  • 2 tsp soy sauce
  • 20 oz can pineapple chunks
  • Cooked rice, for serving

Instructions 

  • Add the chicken, barbecue sauce, garlic, soy sauce, and pineapple to a greased slow cooker. Stir to coat the chicken well.
  • Cover and cook on LOW for 5 hours, or until the chicken is cooked through. Shred the chicken and enjoy over cooked rice.

    Tried this with my new crock pot and really liked it! Wish it were a little less sweet but I think just adding a different BBQ sauce would do the trick, or adding a side dish of some sort. I am not quite sure what vegetable to serve it with that would be “on theme” though.
