Slow Cooker Pineapple Shredded Pork

This slow cooker pineapple shredded pork is sweet, tangy, and melt-in-your-mouth tender. It’s perfect for tacos, sandwiches, or serving over rice for a tropical-inspired dinner.

Ingredients 

  • 3 lb pork loin
  • salt and pepper
  • 2 tbs minced garlic
  • ¼ cup low sodium soy sauce
  • ½ cup brown sugar
  • 20 oz can pineapple chunks with the juices

Instructions 

  • Trim excess fat off of pork and season on both sides with salt and pepper
  • Place pork in the slow cooker next add in the garlic, soy sauce, pineapple chunks, and sprinkle the brown sugar over the top.
  • Cook on LOW for 7 hours or HIGH for 5 hours.
  • Remove pork from slow cooker and shred with two forks. Place shredded pork back in slow cooker to absorb the juices in the pot for 5-10 minutes. Serve over rice or with dinner rolls. Enjoy!

    This was so easy to.make and my kitchen smelled so good while the pork cooked. I modified it a little by cooking it in my instant pot for 40 mins under pressure instead of slow cooking it. Came out great!
