Slow Cooker Pineapple Shredded Pork

Ingredients

  • 3 lb pork loin

  • salt and pepper

  • 2 tbs minced garlic

  • 1/4 cup low sodium soy sauce

  • 1/2 cup brown sugar

  • 20 oz can pineapple chunks with the juices

Directions

  • Trim excess fat off of pork and season on both sides with salt and pepper
  • Place pork in the slow cooker next add in the garlic, soy sauce, pineapple chunks, and sprinkle the brown sugar over the top.
  • Cook on LOW for 7 hours or HIGH for 5 hours.
  • Remove pork from slow cooker and shred with two forks. Place shredded pork back in slow cooker to absorb the juices in the pot for 5-10 minutes. Serve over rice or with dinner rolls. Enjoy!

  1. This was so easy to.make and my kitchen smelled so good while the pork cooked. I modified it a little by cooking it in my instant pot for 40 mins under pressure instead of slow cooking it. Came out great!

  2. All three of my kids liked this which never happens. We will definitely be making again!
