Slow Cooker Vegetarian Chili with Sweet Potato & Black Beans

Ingredients

  • 2 sweet pototes, peeled and cubed

  • 1/2 onion, chopped

  • 2 tsp minced garlic

  • 2- 15oz diced tomoto cans

  • 2- 15oz black bean cans, drain and rinse

  • 2 cubs chicken broth

  • 1/2 tbs chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper (optional)

  • 1 tsp salt

  • 1 tsp oregano

Directions

  • Add all the ingredients to the slow cooker and give it a really good stir.
  • Cook on low 4-5 hours.
  • Serve hot and top with your favorite toppings!

    I want to try this out as it looks easy, healthy, and delicious! Just had a question about cook time– it says 4 or 5 hours, how do you know which one it is?

    This recipe looks delicious and easy. I’m for sure going to try it! However, I just wanted to mention that for this to be truly vegetarian you would want to sub out the chicken broth for a veggie broth 🙂
