Slow Cooker Vegetarian Chili with Sweet Potato and Black Beans

Hearty, smoky, and plant-powered—this slow cooker vegetarian chili is loaded with flavor and perfect for cozy nights in.

Ingredients 

  • 2 sweet potatoes, peeled and cubed
  • ½ onion, chopped
  • 2 tsp minced garlic
  • 2- 15 oz diced tomato cans
  • 2- 15 oz cans black bean, drain and rinse
  • 2 cans chicken broth
  • ½ tbs chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp cayenne pepper, optional
  • 1 tsp salt
  • 1 tsp oregano

Instructions 

  • Add all the ingredients to the slow cooker and give it a really good stir.
  • Cook on low 4-5 hours.
  • Serve hot and top with your favorite toppings!

    This recipe looks delicious and easy. I’m for sure going to try it! However, I just wanted to mention that for this to be truly vegetarian you would want to sub out the chicken broth for a veggie broth 🙂
