Sweet Potato Black Bean Skillet

This sweet potato black bean skillet is a hearty, one-pan meal full of flavor, fiber, and plant-based goodness—perfect for Meatless Monday.

Ingredients 

  • 2 cups cooked brown, OR white rice
  • 1 sweet potato, peeled and diced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cloves garlic
  • 15 oz can black beans, drained and rinsed
  • 1 cup frozen spinach
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili powder
  • 1 tsp oregano

Instructions 

  • To a large pan on the stove over medium heat add the oil once hot add in the sweet potato, salt and pepper cook for 4-6 minutes until softened.
  • Add in the remaining ingredients stir. Let cook together for 8 minutes. Serve

    This was a hit. I did cook the potatoes a little longer. So yummy and healthy!

    This turned out good! Next time I will cook the sweet potatoes longer before adding the rest of the ingredients. (I had some pieces that were a little harder than I like.) For the spices listed above I did 1 1/2 tablespoons of taco seasoning and some extra salt.
