Sweet Potato Black Bean Skillet
Ingredients
- 2 cups cooked brown, OR white rice
- 1 sweet potato, peeled and diced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 2 cloves garlic
- 15 oz can black beans, drained and rinsed
- 1 cup frozen spinach
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chili powder
- 1 tsp oregano
Instructions
- To a large pan on the stove over medium heat add the oil once hot add in the sweet potato, salt and pepper cook for 4-6 minutes until softened.
- Add in the remaining ingredients stir. Let cook together for 8 minutes. Serve

This was a hit. I did cook the potatoes a little longer. So yummy and healthy!
This turned out good! Next time I will cook the sweet potatoes longer before adding the rest of the ingredients. (I had some pieces that were a little harder than I like.) For the spices listed above I did 1 1/2 tablespoons of taco seasoning and some extra salt.
